There will also be a team member walking around the lakes to answer any other questions you might have.
Choose How You Want Your Salmon Prepared
Filleted or Gutted – Included in the salmon price ($35/kg). We can wrap your fillets in paper or vacuum-seal them. We also offer chiller bags with ice for those who are traveling—feel free to bring your own as well!
Additional Processing Options:
- Hot Smoked ($10 per fish) – Our hot smoked option is the most popular. Smoked in the Trager, the salmon comes out lightly smoked with a buttery flavor. Served with crackers, pickled vegetables, and a rocket sauce. Options for dine-in or takeaway—delicious!
- Sashimi ($20 per fish) – Fresh sashimi-style salmon is a crowd-pleaser for those who enjoy salmon at its freshest. Straight from the lake, sashimi-style salmon is beautiful, served with wasabi peas, ponzu pearls, soy, ginger, and wasabi. Options for dine-in or takeaway.
- Cold Smoked Exchange ($20 per fish) – Our cold smoked salmon exchange offers 40% of your salmon weight in cold smoked product. This takes up to three days for processing, including curing, smoking, and glazing. It’s sweet, salty, and smoky—but delicate at the same time. Options for takeaway only.
Can’t Decide? – Opt for a half-and-half processed fish to get the best of both worlds.
